Roasted Garlic Butter Chicken – Recipe

For the Chicken

1 kg chicken (whole or cut pieces)

Salt – 1 tsp

Black pepper – 1 tsp
-
Paprika / Chili powder – 1 tsp
-
1 tsp dried oregano (optional)
Garlic Butter Sauce
-
6–8 garlic cloves (finely chopped or minced)
-
4 tbsp butter
-
2 tbsp olive oil
-
1 tbsp lemon juice
-
1 tsp soy sauce (optional, adds color + flavor)
-
1 tsp honey (optional, for a glossy finish)
-
Fresh parsley (chopped) for garnish
🧄 Instructions
1. Prep the Chicken

Pat the chicken dry.

Season with salt, pepper, paprika, and oregano.

Let it rest for 10 minutes.
2. Make the Garlic Butter

Heat a small pan on low heat.

Add butter + olive oil.
-
When melted, add garlic and sauté until fragrant (don’t brown).

Mix in lemon juice, soy sauce, honey.
-
Cook for 30 seconds and turn off heat.
3. Coat the Chicken

Pour half of the garlic butter over the chicken.
-
Massage well so every piece is coated.
4. Roast the Chicken

Preheat oven to 200°C / 392°F.

Place chicken on a baking tray.

Roast 35–45 minutes, depending on size.

Baste with the remaining garlic butter halfway through.
5. Finish & Serve

When golden and roasted, remove from oven.

Garnish with fresh parsley.
