๐ Baked Feta Pasta 2.0 – Recipe

200g feta cheese block

300g cherry tomatoes

4 cloves garlic (crushed)

3 tbsp olive oil
-
1 tsp chili flakes
-
1 tsp dried oregano
-
½ tsp black pepper
-
Salt to taste

250g penne or pasta of choice
-
½ cup pasta water (reserved)
-
½ cup fresh basil leaves
-
¼ cup grated Parmesan (optional)
-
2 tbsp pesto (new 2.0 twist)
-
½ cup roasted bell peppers, chopped (optional upgrade)
๐ฉ๐ณ Instructions
1. Prep the baking dish

Preheat oven to 200°C (400°F).

Place feta block in the center of a baking dish.

Add cherry tomatoes, garlic, olive oil, chili flakes, oregano, salt, and pepper around it.

Toss lightly to coat everything.
2. Bake the feta mixture

Bake for 25 minutes until tomatoes burst and feta becomes soft and creamy.

Switch to broil/grill mode for 3–5 minutes for a golden top (2.0 upgrade).
3. Cook the pasta

While baking, cook pasta according to package instructions.

Reserve ½ cup pasta water.
4. Mix everything

Remove dish from the oven.

Smash the tomatoes and feta into a creamy sauce.

Add pesto and mix for added richness.

Add pasta, roasted bell peppers, and splash in pasta water to adjust creaminess.
5. Finishing touches
-
Stir in basil leaves.

Optionally add Parmesan for extra flavor.
