  • 200g feta cheese block

  • 300g cherry tomatoes

  • 4 cloves garlic (crushed)

  • 3 tbsp olive oil

  • 1 tsp chili flakes

  • 1 tsp dried oregano

  • ½ tsp black pepper

  • Salt to taste

  • 250g penne or pasta of choice

  • ½ cup pasta water (reserved)

  • ½ cup fresh basil leaves

  • ¼ cup grated Parmesan (optional)

  • 2 tbsp pesto (new 2.0 twist)

  • ½ cup roasted bell peppers, chopped (optional upgrade)

1. Prep the baking dish

  • Preheat oven to 200°C (400°F).

  • Place feta block in the center of a baking dish.

  • Add cherry tomatoes, garlic, olive oil, chili flakes, oregano, salt, and pepper around it.

  • Toss lightly to coat everything.


2. Bake the feta mixture

  • Bake for 25 minutes until tomatoes burst and feta becomes soft and creamy.

  • Switch to broil/grill mode for 3–5 minutes for a golden top (2.0 upgrade).


3. Cook the pasta

  • While baking, cook pasta according to package instructions.

  • Reserve ½ cup pasta water.


4. Mix everything

  • Remove dish from the oven.

  • Smash the tomatoes and feta into a creamy sauce.

  • Add pesto and mix for added richness.

  • Add pasta, roasted bell peppers, and splash in pasta water to adjust creaminess.


5. Finishing touches

  • Stir in basil leaves.

  • Optionally add Parmesan for extra flavor.
