Ingredients

  • 250g pasta (shells or macaroni work great)

  • 250g ground chicken or beef

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1 ½ cups tomato sauce (or crushed tomatoes)

  • 1 cup water

  • 1 cup shredded cheddar cheese

  • ½ cup mozzarella (optional for extra cheesiness)

  • 2 tbsp oil

  • Salt to taste

  • Fresh coriander or spring onion for garnish


Instructions

1. Cook the pasta

  • Boil the pasta according to package directions.

  • Drain and keep aside.

2. Cook the meat

  • Heat oil in a skillet.

  • Add chopped onion and sauté until soft.

  • Add garlic and cook 30 seconds.

  • Add ground chicken/beef and cook until browned.

3. Add taco flavor

  • Sprinkle taco seasoning over the meat.

  • Mix well for 1 minute.

4. Make the sauce

  • Pour in tomato sauce and water.

  • Mix and let it simmer for 3–4 minutes.

5. Combine pasta

  • Add the cooked pasta into the skillet.

  • Stir gently until everything is coated in the sauce.

6. Add cheese

  • Sprinkle cheddar and mozzarella on top.

  • Cover and let it melt for 2–3 minutes.

  • Stir once to make it creamy.

7. Serve

  • Garnish with coriander or spring onion.

  • Serve warm!


Tips

  • Add sweet corn or bell peppers for extra flavor.

  • Want it spicy? Add chili flakes or jalapeños.

  • Use whole-wheat or gluten-free pasta if you prefer.
