Ingredients:

  • 1 cup glutinous rice (soaked for 4 hours)
  • 1 cup coconut milk
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 ripe mango (sliced)
  • 1 tablespoon sesame seeds (for garnish)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon cornstarch (for thickening)

Instructions:

  • In a pot, combine soaked glutinous rice with 1 cup of water and steam for about 20 minutes until cooked.
  • In a separate saucepan, mix coconut milk, sugar, salt, and vanilla extract. Heat gently until sugar dissolves.
  • Once the rice is cooked, mix it with half of the coconut milk mixture and let it sit for a few minutes.
  • In a non-stick pan, pour a ladle of the rice mixture and spread it out to form a pancake. Cook for about 1-2 minutes on each side until golden brown.
  • Serve the pancakes topped with sliced mango, drizzled with the remaining coconut milk mixture, and sprinkle with sesame seeds.
