Ingredients:

  • 2 large bell peppers (any color)
  • 1 cup cooked basmati rice
  • 1/2 cup mixed vegetables (peas, carrots, corn)
  • 1/2 cup cooked chickpeas
  • 1 tablespoon biryani masala
  • 1 tablespoon olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  • Preheat the oven to 350°F (175°C).
  • Cut the tops off the bell peppers and remove the seeds.
  • In a bowl, mix the cooked basmati rice, mixed vegetables, chickpeas, biryani masala, olive oil, and salt until well combined.
  • Stuff the bell peppers with the biryani mixture, pressing down gently to pack it in.
  • Place the stuffed peppers upright in a baking dish and cover with foil.
  • Bake in the preheated oven for 20 minutes, or until the peppers are tender.
  • Remove from the oven, garnish with fresh cilantro, and serve hot.
