Ingredients:

  • 2 whole wheat tortillas
  • 200g cooked tandoori chicken, shredded
  • 100g shredded mozzarella cheese
  • 50g Greek yogurt
  • 1 tablespoon tandoori spice mix
  • 1 tablespoon olive oil
  • 1/2 cup chopped fresh cilantro
  • Salt to taste

  • Skillet
  • Spatula
  • Knife
  • Cutting board

Instructions:

  • Heat olive oil in a skillet over medium heat.
  • Place one tortilla in the skillet and layer half of the shredded chicken on top.
  • Sprinkle half of the mozzarella cheese over the chicken.
  • Add a dollop of Greek yogurt and sprinkle with tandoori spice mix and cilantro.
  • Top with the second tortilla and cook until the bottom is golden brown, about 2 minutes.
  • Carefully flip the quesadilla and cook the other side until golden brown and the cheese is melted, about 2 more minutes.
  • Remove from skillet, cut into wedges, and serve hot.
