Ingredients:

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup imitation crab meat, shredded
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 1/4 cup green onions, chopped
  • 1 sheet nori, cut into small squares
  • 1/2 avocado, sliced

Instructions:

  • Rinse the sushi rice under cold water until the water runs clear.
  • In a pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until water is absorbed.
  • In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and let it cool slightly.
  • In another bowl, combine shredded crab meat, mayonnaise, and sriracha sauce.
  • Preheat the oven to 350°F (175°C).
  • In a muffin tin, place small amounts of the sushi rice at the bottom of each cup, pressing down to form a base.
  • Top the rice with the crab mixture, then add a slice of avocado and a sprinkle of green onions.
  • Bake in the oven for 5 minutes until heated through and slightly golden.
  • Remove from the oven and garnish with nori squares before serving.
