Ingredients:

  • 200g of chicken breast (diced)
  • 100g of rice
  • 200ml of coconut milk
  • 1 tablespoon of curry powder
  • 1 tablespoon of vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

  • Measuring cups

Instructions:

  • Heat the vegetable oil in a pan over medium heat.
  • Add the diced chicken breast and cook until browned.
  • Stir in the curry powder and cook for another minute.
  • Pour in the coconut milk, salt, and pepper; let it simmer for 2 minutes.
  • Meanwhile, cook the rice according to package instructions in a separate pot.
  • Once cooked, drain the rice and serve it alongside the chicken curry.
  • Garnish with fresh cilantro before serving.
