Ingredients

For the turkey

  • 1 whole turkey (4–5 kg)

  • ½ cup unsalted butter, softened

  • 4 garlic cloves, finely minced

  • 2 tablespoons olive oil

  • 1 tablespoon fresh rosemary, chopped

  • 1 tablespoon fresh thyme

  • 1 large orange, quartered

  • 1 onion, quartered

  • Salt and freshly ground black pepper

For the signature honey glaze

  • ½ cup pure honey

  • 3 tablespoons melted butter

  • 3 tablespoons fresh orange juice

  • 1 tablespoon Dijon mustard

  • 2 garlic cloves, minced

  • 1 tablespoon soy sauce

  • ½ teaspoon smoked paprika

  • A pinch of cinnamon

Cooking Instructions

1. Prepare the turkey

Completely thaw the turkey in the refrigerator if frozen. Remove the giblets, pat the skin thoroughly dry, and place it in a roasting pan.

2. Create the herb butter

Combine softened butter, minced garlic, rosemary, thyme, olive oil, salt, and black pepper. Gently loosen the turkey skin and spread some herb butter underneath. Rub the remaining mixture over the entire turkey.

3. Add festive aromatics

Fill the turkey cavity with orange quarters and onion. These aromatics add a beautiful fragrance during roasting.

4. Roast until golden

Preheat the oven to 325°F (165°C). Roast the turkey breast-side up, following its weight and your oven's cooking guidance. Baste occasionally with the pan juices.

5. Prepare the honey-orange glaze

In a small saucepan, combine honey, melted butter, orange juice, Dijon mustard, garlic, soy sauce, smoked paprika, and cinnamon. Warm gently until smooth.

6. Apply the signature glaze

During the final 30–45 minutes of roasting, brush the turkey generously with the honey glaze several times. Watch carefully to prevent the honey from burning.

7. Check for perfect doneness

Use a food thermometer to ensure the thickest part of the breast and innermost thigh and wing areas reach 165°F (74°C), avoiding contact with bone.

8. Rest and carve

Remove the turkey from the oven and allow it to rest for 20–30 minutes before carving.

9. Create the Christmas presentation

Arrange the carved turkey on a large serving platter with roasted baby potatoes, glazed carrots, fresh orange slices, cranberries, rosemary, and thyme.

Chef's Secrets for the Perfect Roast

  • Dry the turkey skin thoroughly before seasoning for better browning.

  • Apply honey glaze toward the end to prevent excessive caramelization.

  • Use fresh herbs for a more aromatic flavor.

  • Allow enough resting time before carving.

  • Serve with warm pan gravy for an unforgettable festive meal.
