No-Bake Lotus Biscoff Pie

Ingredients

For the Crust

  • 200 g Lotus Biscoff biscuits

  • 100 g melted butter

For the Filling

  • 200 g cream cheese (room temperature)

  • 1 cup whipping cream (cold)

  • ½ cup powdered sugar

  • ½ cup Lotus Biscoff spread (smooth)

  • 1 tsp vanilla essence

For the Topping

  • ¼ cup Lotus Biscoff spread (melted)

  • Crushed Lotus Biscoff biscuits (for garnish)


Instructions

  1. Prepare the Crust

    • Crush the Lotus Biscoff biscuits into fine crumbs.

    • Mix with melted butter until well combined.

    • Press firmly into a pie dish.

    • Refrigerate for 15–20 minutes to set.

  2. Make the Filling

    • In a bowl, beat cream cheese until smooth.

    • Add powdered sugar and vanilla essence, mix well.

    • Add Lotus Biscoff spread and beat until creamy.

    • In a separate bowl, whip the cream until stiff peaks form.

    • Gently fold whipped cream into the Biscoff mixture.

  3. Assemble the Pie

    • Pour the filling over the chilled crust.

    • Smooth the top evenly.

    • Refrigerate for at least 4 hours (or overnight for best results).

  4. Add the Topping

    • Melt the Biscoff spread slightly and drizzle over the pie.

    • Sprinkle crushed Biscoff biscuits on top.

  5. Serve & Enjoy

    • Slice chilled and serve cold.

  • Add white chocolate shavings for extra richness.
