4 medium sweet potatoes

2 cups cooked chicken (shredded or chopped)

½ cup buffalo sauce (adjust to taste)

¼ cup cream cheese, softened

½ cup shredded mozzarella or cheddar cheese

2 tablespoons butter

Salt & pepper, to taste

Ranch or blue cheese dressing

👩🍳 Instructions

Bake Sweet Potatoes
Preheat oven to 200°C (400°F).
Wash sweet potatoes, poke holes with a fork, rub lightly with oil, and bake for 40–45 minutes until soft. -
Make Buffalo Chicken
In a bowl, mix cooked chicken, buffalo sauce, cream cheese, butter, salt, and pepper until creamy. -
Stuff Potatoes
Slice each baked sweet potato lengthwise and gently mash the inside with a fork.
Spoon buffalo chicken mixture into each potato. -
Add Cheese & Bake Again
Sprinkle cheese on top and return to oven for 8–10 minutes until melted. -
Serve
Drizzle with ranch or blue cheese dressing and garnish with green onions.
