🥔 Buffalo Chicken Stuffed Sweet Potatoes

🛒 Ingredients

  • 4 medium sweet potatoes

  • 2 cups cooked chicken (shredded or chopped)

  • ½ cup buffalo sauce (adjust to taste)

  • ¼ cup cream cheese, softened

  • ½ cup shredded mozzarella or cheddar cheese

  • 2 tablespoons butter

  • Salt & pepper, to taste

Toppings (optional):

  • Ranch or blue cheese dressing

  • Chopped green onions

  • Extra shredded cheese


👩‍🍳 Instructions

  1. Bake Sweet Potatoes
    Preheat oven to 200°C (400°F).
    Wash sweet potatoes, poke holes with a fork, rub lightly with oil, and bake for 40–45 minutes until soft.

  2. Make Buffalo Chicken
    In a bowl, mix cooked chicken, buffalo sauce, cream cheese, butter, salt, and pepper until creamy.

  3. Stuff Potatoes
    Slice each baked sweet potato lengthwise and gently mash the inside with a fork.
    Spoon buffalo chicken mixture into each potato.

  4. Add Cheese & Bake Again
    Sprinkle cheese on top and return to oven for 8–10 minutes until melted.

  5. Serve
    Drizzle with ranch or blue cheese dressing and garnish with green onions.


⭐ Tips

  • Use rotisserie chicken to save time

  • Make it milder by mixing buffalo sauce with a little ranch

  • Air fryer option: cook sweet potatoes at 190°C for 35 minutes
