Ingredients:

For the filling:

  • 1 lb (450g) ground lamb (or ground beef for Cottage Pie)

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 2 medium carrots, diced

  • 1 cup frozen peas

  • 1 cup beef broth

  • 2 tbsp tomato paste

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried thyme

  • Salt and pepper to taste

  • 2 tbsp olive oil

For the mashed potato topping:

  • 2 lbs (900g) potatoes, peeled and cubed

  • 4 tbsp unsalted butter

  • 1/4 cup milk (adjust as needed)

  • Salt and pepper to taste

Instructions:

Step 1: Prepare the mashed potatoes

  1. Boil the cubed potatoes in salted water until fork-tender (about 15 minutes).

  2. Drain the water and mash the potatoes with butter and milk. Season with salt and pepper. Set aside.

Step 2: Cook the filling

  1. Heat olive oil in a large skillet over medium heat.

  2. Add the chopped onion and garlic. Sauté until fragrant and soft.

  3. Stir in the ground lamb (or beef) and cook until browned. Drain excess fat if necessary.

  4. Add the carrots, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Stir well.

  5. Pour in the beef broth and let it simmer for 10 minutes. Add the frozen peas in the last 5 minutes.

Step 3: Assemble the Shepherd’s Pie

  1. Preheat your oven to 400°F (200°C).

  2. Transfer the filling to a baking dish and spread it evenly.

  3. Spoon the mashed potatoes over the filling and smooth them out with a spatula. Use a fork to create decorative ridges on top.

Step 4: Bake

  1. Place the dish in the oven and bake for 20-25 minutes, or until the top is golden brown and slightly crispy.

  2. Let it cool for a few minutes before serving.

Tips for the Best Shepherd’s Pie:

  • Make it ahead: You can prepare the filling and mashed potatoes a day in advance. Assemble and bake when ready to serve.

  • Cheesy twist: Add shredded cheddar cheese to the mashed potatoes for a cheesy crust.

  • Gluten-free option: Use cornstarch to thicken the filling instead of flour.
