Ingredients:

  • 1/2 cup of chia seeds
  • 2 cups of almond milk
  • 2 tablespoons of honey
  • 1 teaspoon of vanilla extract
  • 1 cup of mixed berries (strawberries, blueberries, raspberries)

Instructions:

  • In a mixing bowl, combine 1/2 cup of chia seeds and 2 cups of almond milk. Stir well to avoid clumping.
  • Add 2 tablespoons of honey and 1 teaspoon of vanilla extract to the mixture. Whisk until everything is well combined.
  • Let the mixture sit for about 5 minutes, then whisk again to prevent the chia seeds from settling at the bottom.
  • Cover the mixing bowl and refrigerate for at least 2 hours or overnight for the best texture.
  • When ready to serve, portion the chia pudding into serving glasses and top with 1 cup of mixed berries.
